Our Sopa de Pelotas del Matarraña and Els Ports has the story of a family in which it has always been cooked, and also, luxury.
It is the typical soup that was enjoyed at parties, traditional especially, in the Morella area, dels Ports, of Cantavieja, by Iglesuela, of Villafranca del Cid, that is, neighboring localities with which we share many things, as well as recipes and traditions. It is a very popular soup in both Matarraña and Maestrazgo.
In our house, forever, is a soup that was not missing on the table for Christmas, like others And not only to warm the body! Instead, the custom was maintained from generation to generation. It's very wintery, of the typical dish that was cooked over low heat and that was always present until after carnival.
Simple but “with foundation”, has a base of broth with substance, with a lot of substance… chick, ham and veal bone, with a lot of vegetables (celery, leek, carrot), to have a spectacular and very special broth. In Posada Guadalupe, we put fried ham at the end to give it our touch. The balls are made with bread soaked with garlic and parsley and… we put many more things ham, longaniza or loin among others. At the end they are cooked in the broth providing their substance, they are fished and then reserved until the pass. It is the norm of the house, that when we put, we never do less than 100 and they fly!!!
